I’ve been on a sheet pan recipe kick lately because it’s so easy to make, clean up, and a filling way to feed a family. These vegetable sheet pan recipes work as side dishes or main dishes and are delicious.

We all know we need to eat more vegetables in our diets, the goal with this post is to help you find delicious ways to eat vegetables more easily.

I’ve got tips that help you to create more delicious vegetable dishes that your family will actually enjoy eating. 

Get More Vegetables In Your Diet

After following a strict vegan diet for 6 months the one thing we brought out of it was the importance of eating more vegetables. We make vegetables the main dish at most of our meals now. 

Our plates are typically three quarters vegetable with that last third being a meat or animal product. With so much intake of vegetables I needed easy vegetable options.

Sheet pan recipes take little prep, are easy to make, and are delicious. Sheet pan recipes are one of my favorite ways to cook because it is extremely simple and takes little prep time.

Cooking Times For Different Types Of Vegetables

Cooking times vary on different types of vegetables. TheKitchn.com has some helpful cooking times here.

However, sometimes you can get away with mixing different cooking times on vegetables. For instance, I often cook brussel sprouts and green beans together, even though the brussel sprouts need an additional five minutes of roasting time.

The trick is to watch your vegetables. Once you reach the lower end of the cook time check on your veggies every few minutes to make sure they aren’t over cooking.

Mixing Vegetables

I personally like to mix up my colors. Not only is mixing the colors of your veggies a great way to get a well rounded amount of antioxidants, it looks good too.

Mix your orange and red tomatoes with greens and yellows to brighten up your plate.

I personally like mixing onions with assorted colors of peppers. Mix sweet vegetables like butternut squash with spinach or peppers.

Also, don’t douse your vegetables in cheese to make them taste good. Seasoning and plenty of oil is your key to great roasted vegetables. 

Garlic, onion powder, salt, pepper, cayenne, paprika, and cumin all make amazing seasonings to use on vegetables.

Before you get started on your sheet pan recipe of choice there are a few tips you are going to need to know.

Line your sheet pan with parchment paper in order to make clean up super easy and avoid the vegetables sticking. Also use plenty of oil to coat your vegetables.

Another thing you’ll need to make sure of is you season your vegetables evenly, Use a large mixing bowl to coat your vegetables evenly. 

Final Thoughts

Sheet pan recipes make dinner prep and cooking easier while filling your family. They also make clean up easier. I personally prefer how I can make a super healthy meal without sacrificing taste.
