The only types of meals I seem to like to make these days are One Pot Recipes. They are easy, typically don’t require a lot of work, and there are usually left overs for the next day.
Since I started writing my first fantasy book I’ve been working double time between this blog, reading, and writing. I don’t have a lot of time to spend in the kitchen these days. These one pot meals have been a lifesaver and they are so easy my husband will even make a few so that I can keep writing.
Additionally, these meals are super easy to clean up because it’s typically just your dishes and a pot. This is extra nice for when you are super busy or have to put a dinner together quickly.

The thing I love about one pot recipes is you can easily sub out ingredients or change minor things and still receive similar results. An easy and filling dinner that will please your whole family while still being super easy to clean up.
