During the hot summer months I find myself wanting lighter lunch and dinner options. However, having the same salad over and over can become boring. I’m sharing 10 unique summer salad recipes with you today.
It doesn’t matter if you work from home or out of the home, a garden salad is not going to give you enough energy to make it through the day. You need a salad with protein, healthy fats, and filling fruits.

Salads make delicious lunches and light dinners. I often times will whip up a hearty salad with plenty of meat, veggies, and flavors. They are filling without feeling guilty.

Honey Mustard Chicken Avocado Bacon Salad
I love avocado so I am immediately drawn to this salad. The added chicken and bacon means I will feel full when I’m done eating it without feeling bloated or heavy. Lots of healthy fat and protein in this salad means I’m more likely to stick to my low carb diet.
Southwestern Chicken Salad
Southwest Salads always pack a little punch. I love the kick the chicken in this salad has. I use plain greek yogurt for the dressing instead of sour cream and the dressing matches the salad well. If you are not a fan of Cilantro like me, you can try any southwest dressing in your fridge.
Shrimp Avocado Salad
This salad is so colorful! I learned a long time ago that plates should be filled with different colors and this salad is exactly that. I love the mixture of Shrimp, avocado and cilantro dressing.
Apple Brie Salad
I’m not a big fan of pecans. I know, I know, You’ve lost all faith in me. However, I actually really love the pecans in this salad. Mixed with greens, brie and the sweetness of apples this salad is really delicious, even with the pecans.
Grilled Chili Lime Chicken Fajita Salad
I’m sure you’ve caught on by now but I love a bit of kick in my salads. This salad has a lot of flavor. I did cheat and added a mixture of colby jack and pepper jack shredded cheeses, because cheese!

Cucumber Greek Salad
Speaking of cheese, Feta holds a special place in my heart so this salad spoke to me. While I didn’t add the olives this salad was filled with flavor and was so light on my stomach but left me feeling satisfied.
Avocado Tuna Salad
Using Avocado to mix up Tuna Salad is one of my absolute favorite ways to turn one of my favorite comfort foods into a healthy alternative. This salad needs no wrap, or bread of any kind. You can eat it just on its own, feel full and get many needed nutrients to fuel your day.
Southwestern Chopped Salad
Have I mentioned how much I love my salads to have a kick of flavor. This is a light and refreshing salad with plenty of protein in the chicken to fuel your day. Plus it has that kick that will please even the non salad eaters in your home.
Chicken Avocado and Feta Salad
This salad makes the perfect lunch, packed with flavor and filled with nutrients to keep you going till dinner. It’s light weight, healthy, and tasty. It’s easy to put together and you can make it the night before to let the lemon juice, salt, and pepper marinate the salad.
Mediterranean Quinoa Salad
This is such a light and healthy salad. I personally leave out the olives but everything else still makes for a tasty lunch or light dinner.

Easy Summer Salads
To save on time for packing a healthy summer salad for lunch consider cooking a couple extra chicken breasts at dinner one night. With the large size of most chicken breasts you can easily slice those two extras up into 4 servings to add to salads.
Another helpful tip is to pack your salad dressing in a separate container so your salad isn’t sitting in it for several hours or overnight. It helps to keep your salad crisp instead of soggy.
