So it’s been said that breakfast is the most important meal of the day. While studies do not necessarily show proof of this there are a few good reasons to eat breakfast and not skip it.
People who eat breakfast have a lower risk for Type 2 Diabetes when eating a breakfast filled with fiber or lean proteins. A quick doughnut might give you some quick satisfaction in the morning but adding sugar like this to your morning can actually cause you to eat an increased amount of sugar throughout the day.
My own struggle with breakfast is that I almost always forget to eat it. I wake up in the morning, drink my coffee, start working, and before I know it it’s 10 am and I haven’t had any food. At that point I usually just wait to eat till lunch.
For people like me this may lead to increased consumption of calories because you aren’t spacing out your foods in a way that keeps your blood sugars stable throughout the day.
So to help you and me to start eating breakfast consistently I’ve scoured the internet for quick breakfasts that can be made ahead of time or put together quickly for on the go breakfasts.

How To Meal Prep Your Breakfast
I like to meal prep breakfasts for the week on Sunday. Sometimes I make chocolate chip pancakes for Sunday morning breakfast and then freeze a few extra for the week. This offers a quick heat and serve breakfast for my picky eater.
I may make muffins on Sundays for easy grab and go breakfasts too. I like to hide zucchini in my muffins for extra nutrients.
My favorite breakfasts are smoothies because they sit better on my stomach than other options. Sometimes eating bread products I’ll feel a bit bloated in the morning. So a smoothie is a great option and it gets in a full serving of fruit – and sometimes veggies – in a complete breakfast. You can read about how I meal prep smoothies for a full month here.
Making breakfast sandwiches and wraps are another favorite of ours. My husband especially likes the ease of a breakfast sandwich.
I usually prefer to make a couple different options for breakfast through the week. Usually, a wrap or sandwich of some sort, a baked good like muffins, and smoothies.
Quick Healthy Breakfast Recipes
Below I have a few delicious options if your looking to add breakfast or change up your normal breakfast options through the week.
Most of these are make ahead options that allow you to just grab and go for those busy mornings of dropping kids off at school and trying to get to work on time. They also are filling breakfasts that will keep your energy levels up till lunch.

Upside Down Pineapple Protein Shake
For my sweets lovers this protein packed shake is perfect for you. You can have all the satisfaction of sweetness while packing in lots of filling protein. Enjoy this awesome protein shake while driving to work.
I highly recommend having a powerful long lasting blender if you like making smoothies. This blender is super powerful, works as a food processor, and literally can blend anything.
Triple Berry Kiwi Smoothie
I love berry smoothies. In the morning when I’m not super hungry but know I need to start my day of right. This berry kiwi smoothie really hits the spot. It’s so delicious.
If you like a good dose of protein in the morning these egg breakfast options are right for you.
Vegetable and Egg Muffins
The best thing about these muffins are they are about 100 calories a piece. You can eat 3 for breakfast and feel full through lunch. They are a great protein packed option to start your day off on the right foot. I like to bag these up in 3’s so we can grab heat and go.
Scrambled Egg Muffins
If you are cooking for an army of kids needing to get to school and you and a husband needing to get to work this is a great option. Simply scramble the eggs up, prepare it in a muffin tin, pop it in the fridge over night. When you wake up you can bake them while you get ready. Then it’s a hot filling breakfast for your whole family before you go about your days.

Peanut Butter Strawberry Banana Quesadilla
Spread some peanut butter on a low carb whole wheat tortilla, add sliced strawberries, and bananas. You have a nutrient and protein packed breakfast to keep you going till lunch. Make these the night before, pop them in the fridge then grab it before you walk out the door to work.

Protein packed and an easy way to get your daily apple in. Kids love how they can create a fun sweet treat and you don’t have to worry about them not getting enough protein and fruit in their diet. While these aren’t really make ahead, due to the need to have fresh apple they are still quick enough that you can fit it in the morning rush.
Apple Peanut Butter Wrap
Here we have a well rounded breakfast that’s easy to make the night before for grab and go mornings. Get that extra sleep knowing breakfast is a breeze with this filling wrap.
Ham, Egg, and Avocado Breakfast Burrito
For the egg lovers in the house this breakfast burrito is healthy and filling. Packed full of protein and healthy fats it’s an awesome energy producing breakfast for those busy mornings. You can skip the avocado make a bunch in a large batch wrap them in a damp paper towel then in parchment paper and place them in a Tupperware or gallon size plastic bag in your freezer.
Simply unwrap the parchment paper then heat in the microwave for a minute for a hot breakfast burrito. You can add the sliced avocado at this point if needed for that dose of healthy and filling fats that will hold you over till lunch.

Egg and Vegetable Breakfast Sandwich
At half the carbs the bagel thins are an awesome way to get your morning bread fix. Otherwise you can use whole grain bagels for a good dose of filling fibers. Egg Whites, fresh veggies and a bit of cheese makes this breakfast sandwich and nutrient packed and easy to make breakfast. Plus who doesn’t love a great bagel sandwich?
Baked Breakfast Goods
My kid loves baked goods these are some great options I can whip up at the beginning of the week to have breakfasts all week long.
Applesauce Oat Muffins
You can make these muffins and have them all week long for breakfast, just grab them and go. Healthy and packed full of energy producing nutrients these muffins are a great easy grab and go breakfast.
I like this silicone muffin pan. I never have to worry about rusting metal or needing paper muffin cups. It’s completely non stick so you can make anything from muffins, eggs, taco cups, and cupcakes with them.
I love blueberry muffins, but grabbing a muffin and Starbucks or the gas station means you’re eating a bunch of carbs and very little protein. These muffins are healthy, natural and are a full of nutrients to fill you up every morning. You can ditch the extra cost and the extra ingredients while still having a sweet baked good for breakfast.

Need to make sure you are getting in your daily amount of fiber? Oatmeal is a great choice for breakfast and these options make oatmeal faster and healthier than ever.
Freezer Oatmeal Cups
These make a great easy breakfast for you and your kids. Make them ahead of time, add protein packed nuts and nutrient filled fruits and freeze.
Theses are especially great for including your kids in making them. They can add whatever ingredients they desire to their own oatmeal cups. It includes them in the process of making food and starts them at a young age to learning how to prep food in house instead of ordering out.
Banana Zucchini Oatmeal Cups
Remember how I said I like to sneak zucchini into muffins to feel like my kid is eating his veggies. These work like a charm for my picky eater. He loves banana which completely masks zucchini and it feels like he’s eating a cookie for breakfast.
Blueberry Banana Overnight Oats
Overnight oats make for a delicious and filling breakfast in the morning. It can be eaten cold or heated up in the mason jar in your microwave. This tasty oatmeal makes for a delicious and quick breakfast when you are on the go.
Mason jars like these are really the best for making overnight oats, chia pudding, and other overnight breakfasts in. Plus just remove the lid and you can pop your overnight oats into the microwave for an easy filling breakfast.
Strawberry Oatmeal Bars
These homemade granola like bars give you lots of filling fiber and a nice helping of fruit. Grab and Go or a healthy sweet snack for the kids makes this oatmeal bar a must have in your home.

If you really want something unique for breakfast – or to switch up your normal routine – these options are fantastic.

Breakfast bark is great for us munchers. You know we like to eat while we work or eat while we drive and just need a small something to munch on. Instead of grabbing something through a drive-thru you can whip up a large batch of this breakfast bark and get your fruit and protein servings in without having something heavy on your stomach.
Cinnamon Vanilla Protein Bites
Summer is coming and the last thing we want to do is turn on the oven and bake during those hot summer days. These protein packed bites are like healthy donut holes without frying or baking. I highly recommend these to stay full and energized during our morning rush.
